black bean quesadilla

this recipe is perfect if you need a quick meal or snack, because it only takes 10 minutes to prepare!


yield: 4-6 quesadillas
ingredients
8-10 inch tortillas
1 (15oz) can of black beans
1-2 tbsp taco seasoning
1 cup corn
1/2 cup quartered cherry tomatoes or sliced red bell peppers*
1 cup shredded cheese blend
jalepeño slices (optional)
to serve: guacamole, salsa (i recommend hatch green chile), and/or sour cream
instructions
Heat a saucepan on medium heat and drizzle with some olive oil. Drain and rinse the black beans, and add to the pan once it is hot. Add 1-2 tbsp of water, and sprinkle the taco seasoning on top. Simmer for 2-3 minutes, and remove from heat.
Warm a pan over medium-high heat and place a tortilla on top. Sprinkle some cheese on half of the tortilla and add all of your fillings (see note about peppers if using). Add another sprinkle of cheese to finish it off and fold the tortilla over.
Cook until lightly browned on both sides (~2-3 minutes per side). Serve with your choice of dip! (I used hatch green chile salsa and seasoned sour cream and it was v yummy) Enjoy :)
notes
*if using any bell peppers, i recommend roasting them or pan frying before adding them into the quesadilla. you can roast them by directly cooking over a gas stovetop flame, or baking in the oven (20 minutes per side @ 400°F). this will just add cook time to make the quesadilla, but it might be good to prep some roasted peppers for fajitas or pasta for later :D
other filling ideas include caramelized onions, avocado, chicken, red onions, etc. the possibilities are pretty much endless!
