caprese toast

my personal favorite vegetarian sandwich :)

 
 

prep time: 15 minutes

ingredients

  • bread

  • tomatoes

  • mozzarella

  • spinach (optional)

  • pesto (optional)

  • balsamic vinegar

  • brown sugar

instructions

  1. To make the balsamic glaze, heat 1/2 cup of balsamic vinegar and 1 tbsp brown sugar in a small sauce pan until it gets to a rolling boil. Once boiling, turn the heat down to low and simmer for 5ish minutes. Set aside to cool and thicken.

  2. Toast the bread on a pan or in a toaster until lightly browned.

  3. While the bread is toasting, cut slices of tomato and mozzarella.

  4. Before the bread gets too toasted, spread pesto and add the tomato, mozzarella, and spinach (if using). Heat for an additional 3ish minutes, or until mozzarella is melted.

  5. Drizzle some balsamic on top, and enjoy!

notes

  • The measurements in the balsamic glaze recipe are mostly a personal preference because I tend to only make single serve batches of balsamic glaze (since I'm the only one that uses it lol). If you would like to make bigger batches, just be aware that you will have to heat it for longer to get the right consistency.
