quick, no cook lunch with lots of bright veggies :)

yield: 3-4 wraps
ingredients
1 6oz can of tuna
1 small-medium carrot
1/3 cup cherry tomatoes
1/4 cup green onion
1 1/2 tbsp mayo
1 1/2 tbsp relish
1 tsp black pepper, or to taste
1 tsp salt, or to taste
Big lettuce leaves (I used butter lettuce)
parsley (for garnish, optional)
equal parts ketchup and mayo (for sauce, optional)
instructions
Drain water from tuna can. Set aside.
Chop carrot into thin slices, tomatoes into quarters, and green onion into small pieces.
Add mayo and relish into a bowl, along with the tuna. Mix thoroughly, and add the salt and black pepper.
Wash and dry lettuce leaves. Scoop the tuna mixture into a leaf, and top with the chopped vegetables. Garnish with parsley.
To make the sauce for more flavor, mix equal parts ketchup and mayo and add on top of the salad. Enjoy!
