inspired by the starbucks spinach, feta, and egg white breakfast wrap :)

for one serving
ingredients
1 tortilla
1/2 tbsp olive oil
egg whites (4 tbsp liquid egg whites or whites from 2 eggs)
handful of spinach
1/4 tsp salt and pepper
1/4 avocado
1/3 cup black beans (see notes for prep)
2 tbsp feta
salsa
instructions
Warm a saucepan on medium high heat, then drizzle with olive oil. Cook egg whites and season with salt and pepper. Remove the egg whites from the pan and sauté spinach until slightly wilted (~2 min). Remove spinach from the pan and set aside.
Warm the tortilla over the stove. To assemble, top the warmed tortilla with black beans, egg whites, spinach, sliced avocado, and sprinkle with feta. Serve with salsa, enjoy!
notes
I usually cook a whole can of black beans at one time and use them in my dishes throughout the week. To prepare, heat a saucepan on medium heat and add 1/4 cup of water. Add a can of drained and rinsed black beans to the pan, reduce heat to medium low, then cover and cook for ~5 minutes. Sprinkle 1-2 tsp of taco seasoning, stirring to distribute seasoning evenly. Take off the cover and let simmer until water is dissolved. Store in a container, and use in breakfast burritos/wraps throughout the week!
