feel like baking? try sum zucchini muffins :D

yield: 12 large muffins
cook time: 50 minutes
- Ingredients -
1 1/2 cups all-purpose flour
3/4 cup white sugar
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1 egg
1/2 cup vegetable oil
1/4 cup milk
1 tbsp lemon juice
1 tsp vanilla extract
1 cup shredded zucchini
1/2 cup semisweet chocolate chips (regular or mini)
1/2 cup chopped walnuts (optional)
- Instructions -
Preheat oven to 350°F. Line a muffin pan with 12 paper muffin liners.
Combine flour, sugar, baking soda, cinnamon, and salt in a large bowl.
In a medium bowl, combine egg, oil, milk, lemon juice, and vanilla extract.
Gradually add the liquid mixture into the dry one until just moistened.
Fold in the shredded zucchini, chocolate chips, and walnuts (if using).
Fill each muffin liner 2/3 full with the mixture. Top with a couple chocolate chips if you'd like.
Bake until toothpick comes out clean, about 20-25 minutes.
- Tips -
The zucchinis have a lot of water content so if you have a big zucchini, make sure you don't add too much into the mixture. The 1 cup of zucchini should be lightly packed, and not super tight. I've made this twice, and the second time I used a larger zucchini and it messed with the moisture of the muffins completely.
Cinnamon is yummy. I suggest you use a lot of cinnamon.
