sweet and spicy roasted cauliflower

yield: 4 side servings

time: 25 minutes


ingredients

  • 1 head of cauliflower, cut into bite size pieces

  • cooking oil spray

  • salt, pepper, and granulated garlic

  • for garnish: green onions and Trader Joe's "Everything but the Bagel" seasoning (or sesame seeds)

for the sauce:

  • 1/4 cup soy sauce

  • 1/4 cup honey

  • 1 tbsp sriracha

  • 1 tbsp hoisin sauce

  • 1 garlic clove, chopped

  • 1 tsp ginger paste (optional)

  • sprinkle of chili flakes (optional)

  • 1 tsp cornstarch

instructions

  1. Preheat oven to 400°F.

  2. Line a baking sheet with aluminum foil and spray with cooking oil. Chop and wash the cauliflower into small pieces and spread them evenly on the baking sheet. Season with salt, pepper, and granulated garlic/garlic salt. Toss to coat and cook in the oven for about 15-20 minutes, tossing halfway.

  3. While the cauliflower is in the oven, place a small saucepan on the stovetop and heat on medium-high heat. Add all the sauce ingredients and stir to combine. Let simmer on the stove until the sauce lightly coats the back of a spatula/spoon (about 5-6 min). It will be thinner than expected, but it will thicken when cooled.

  4. Once cooked, add the sauce to the cauliflower and toss to coat. Garnish with chopped green onion and sesame seeds. Enjoy!
